New C&C Kitchen and Catering continues to bring a piece of Mexico to Nevada

LAS VEGAS (KLAS) — Today is Mexican Independence Day, when Mexico declared its independence from Spain in 1810.

Many cars were driving up and down the Las Vegas Strip last night, showing their pride with flags and decorations. The festivities are continuing today.

8 News Now stopped by the new C&C Kitchen, operated by Ricardo’s employees. They tell us why they wanted to continue to bring a piece of Mexico to Nevada.

“We like to use a word: the sequel. We both worked for Ricardo’s Mexican Restaurant for a little bit over 20 years,” shared Carlos Gomez, catering director and partner at C&C.

Ricardo’s Mexican Restaurant opened in 1979. Owner Bob Ansara closed the doors in May.

But former employees Gomez and Jose Carbajal wanted to continue serving authentic favorites. It was with Bob’s blessings and recipes and a few other things you might recognize from Ricardo’s.

Gomez says they will carry on the legacy.

“We’ve kept some of the names, the Ricardo sampler, still called the same, the Burrito de Ricardo’s, still called the same, and the Pollo de Ricardo’s,” Gomez explained. “We have the same chef making the enchilada sauce, the ranchera sauce, the salsas, the menudo. So the recipes, we’re not tweeking them, they are identical.”

Not to mention their famous chips and salsa.

“We are still using his logo,” said Gomez, “We’re still using his napkins.”

For just opening, business is study.

“It’s great to bring a lot of Mexico to Nevada,” Gomez noted.

Patricia Arroyo is originally from Jalisco, Mexico. She says the dishes remind her of home.

“Being Mexican is something that fills me with pride, love our traditions,” she shared in Spanish with 8 News Now. “I love to talk about my culture. I love that people get to learn about Mexico.”

Patrick Hunter isn’t from Mexico but respects the culture, food and people.

“When you grow up in Chicago, that’s the city of neighborhoods, so you know everybody,” he said. “I feel like it’s part of my culture almost.”

C&C Kitchen and Catering is located in the Rancho Discount Mall on Washington and Rancho. Hours are 10-7 p.m. daily, and they are closed on Tuesdays.
